Overcoming Temptation

I've been finding the exercise portion of this challenge easier than eating. Let's face it, I like to eat, and it shows. And I will never cease to enjoy food, however, I can be honest with myself and admit, that I can not eat - EVERYTHING - anymore.

The only way to overcome the temptation of dining out is to BE PREPARED. So I carry a "anti-temptation" kit of healthy alternatives to the usual $2.70 double cheese burger and fries. (It’s a conspiracy to offer food so bad for you at such a cheap price, if you ask me, but that’s another blog).

Pretzel sticks have become a new staple. First, they have the salt my body craves. They are crunchy. And they are much better for you than a bag of chips. And because I know there are only 24 – the serving size, I savor each bite.

Fresh fruit THANK GOD FOR SUMMER! Melons, Strawberries and (soon) Peaches – OH MY! (I will worry about the winter months later.)

I’ve also discovered a love for beans. So tonight’s exercise was to prepare no meat pinto beans. Now I grow up eating pinto beans made a variety of ways because my parents are from different parts of the country. Mommy’s does the bowl with a piece of buttermilk cornbread – can u say a complete tasty meal? Daddy’s came with some Mexican rice and Chicken fajitas, never the less, the beans were usually made with something smoked or salted. So this is uncharted territory for me.

I AM HAPPY TO REPORT, WITHOUT THE MEAT, MY BEANS, THEY ARE A BANGING! It is possible to cook, and have tasteful food without all of the fat!
